Birthday dinner continued! Sweet potato fries are always a good idea. I'm all for frying latkes during Hanukkah, but I was in no mood to fry anything for my dinner party, so these are baked. They won't come out like the fries you'd get at Five Guys, but they'll be a big hit.
Sage sweet potato fries
2 lbs sweet potatoes, sliced
generous drizzle olive oil
1/2 tsp. sea salt
1/2 tsp. garlic powder
1/2 tsp. dried sage
Cut sweet potatoes into slices, about 3-4 inches long and 1/2 and inch thick. Place in a large ziplock bag with the olive oil, salt, garlic powder and sage. Seal bag, and shake to coat.
Bake at 400 degrees for 30-50 minutes, moving and tossing the fries occasionally until crisp.
